Ingredients

    170 grams Cooked Shrimp
    170 grams scallops
    1 lb chicken breast
    5 links of Maple & Honey Sausage (or, whatever sausage you prefer)
    1 can Yellow Sweet Corn
    1.5 cups Diced Tomatoes
    1 cup diced Green Pepper
    3 cloves Garlic - chopped
    1 clove Shallot - chopped
    1 Tbsp Vegetable Oil
    1 Tbsp Chili powder
    1 Tbsp Pepper
    1 Tbsp Cayenne Pepper
    1 Tbsp Dried Cilantro (use fresh if you prefer)
    1 Tbsp All Spice
    1 Tsp Saffron
    3 cups water
    2 cups uncooked Jasmine rice

Directions

*Brown Garlic & Shallot in Vegetable Oil
*Cook sausages & chicken half way
*Throw in the prawns & scallops - stir all together
*Add rest of the ingredients (including rice & water)and stir together
*Bring to a boil and then simmer
*Let simmer for 25 minutes
*Serve!
*Makes 6 servings
