    1.5 cup field/pigeon peas
    1 cup chopped onion
    1 glove garlic, chopped
    0.5 cup diced, sweet red pepper
    1 tbsp dried parsley
    3.5 cups chicken broth
    2oz Gaspar's linguica, diced


Saute onion, garlic, sweet pepper and linguica until onion is transparent. Add field peas and saute for a minute or two. Add enough chicken broth to cover field peas. As liquid is absorbed, add about 0.5 to 1 cup water and cook until peas are soft.

Serving Size: makes 4 1/2 cup servings
