Number of Servings: 12


    1 tbsp coconut oil
    2 cup leeks
    3 garlic cloves minced
    5 cups carrots chopped
    1.5 cup veg broth
    2.5 cups water
    You can use 4 cups veg broth, this is all I had on hand
    cook until carrots are soft, add .5 cup lentils till cooked.
    use hand held blender to make into smooth liquid
    add almond milk at end to make creamy

    this is a vegan recipe
