Introduction

This is something new I'm trying; never had lentils before, but I'm trying to add extra fiber and protein and make the dish go further. This is something new I'm trying; never had lentils before, but I'm trying to add extra fiber and protein and make the dish go further.

Ingredients

    12 oz. ground turkey
    1 small onion, chopped
    2 15.5 oz. cans Dark Red Kidney Beans
    2 14.5 oz. cans Petite Diced Tomatoes
    1 15 oz. can Low Sodium Tomato Sauce
    1/2 cup dried lentils
    1 tbs. garlic powder
    1 tbs. ground cumin
    1/2 tbs. chili powder
    1/2 tbs. black pepper

Directions

Saute onions in a large skilllet. Add turkey to skillet and season with 1/2 tbs. garlic and 1/2 tbs. cumin. Once turkey is browned, transfer to slow cooker and add remaining ingredients. Cook on low 2-3 hours or until lentils reach desired softness.

Serving Size: makes about 7 1.5 cup servings

    Incredible!
    This was delicious! I made some changes, though. I used red onion instead or white or yellow, increased the lentils to 1 cup, used black lentils, added a green pepper, and added two cans of Rotel diced tomatoes with green chilies. (I like my chili with a little zing to it. :-) ) - 11/2/18
