Ingredients

    four tbsp evoo
    five cloves garlic
    red pepper flakes
    one zucchini sliced
    two carrots sliced
    one large onion, diced
    one bag frozed diced green beans
    two cans small red kidney beans
    28oz crushed tomatoes
    one box (4c) veggie broth

    add evoo, slivered garlic and red pepper flakes to bottom of large soup pot
    let sit in cold pot for 10 minutes
    turn heat on under pot, once you can smell the garlic add onion, zucchini and carrots
    let that cook over med heat for 5-6 minutes
    add green beans, kidney beans, tomatoes and broth bring to boil, then lower heat and simmer 30-40 minutes.


Tips

You can add baby spinach once has been brought to a boil
