Ingredients

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 tsp baking powder
1/2 teaspoon salt
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/4 tsp ground ginger
1 egg
1 cup buttermilk
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
1 1/2 cups packed brown sugar
2 Tbsp packed brown sugar
2 cups diced Granny Smith apples
Directions
1. Preheat the oven to 375 degrees F. Line muffin pans with paper muffin cups.
2. In a medium bowl, stir together 2 1/4 cups flour, baking soda, baking powder, cinnamon, nutmeg, allspice, ground ginger and salt. Set aside.
3. In a smaller bowl, combine apples and 2 Tbsp brown sugar. Mix and set aside.
4. In a separate large bowl, whisk together the brown sugar and butter, add egg and beat well. Add vanilla and buttermilk and whisk until combined.
5. Add flour mixture into wet ingredients and whisk until mostly combined.
6. Sprinkle apples over batter and using a spatula fold apples into batter without over mixing until apples are evenly coated.
7. Spoon into the prepared muffin tin, filling the cups to the top.
8. Bake for 25 minutes or until toothpick inserted in center comes out clean. For a little extra something allow to completely cool and frost with cream cheese frosting.
