A delicious vegetarian version of a jamaican favourite!! A delicious vegetarian version of a jamaican favourite!!
Number of Servings: 4


    1 cup Jamaican Pumpkin, cooked and mashed
    2.5 cups good quality Vegetable broth
    1 Tbsp Flour
    1 tsp Salt
    1/8 tsp Ground Ginger
    1/8 tsp Ground Nutmeg
    1 cup Evaporated Milk
    1/2 Tbsp Onion, finely chopped
    1 Large Egg, beaten


Combine the pumpkin and vegetable stock in large saucepan over medium heat. Mix the flour with the salt and spices. Add 1/4 cup of the milk and mix to a smooth paste. Add the remaining milk and beaten egg. Stir into the pumpkin mixture. Add onion. Cook for 5 minutes over low heat , stirring constantly. Serve warm garnished with your favourite herbs if desired.

Makes about 4 servings.
