Ingredients

    eggplant, one large or two small
    1 tsp olive oil
    1 cup diced onion
    1/2 cup diced red pepper
    1/2 cup diced celery

Directions

Cut off the top of eggplant. Moisten hands with olive oil, then rub eggplant. Wrap eggplant in foil and bake at 350 degrees until soft. Let eggplant cool. Once eggplant is cooled, remove skin and collect flesh in a separate bowl.

Spray a pan with nonstick spray. Saute onion, pepper and celery until onion is transparent and celery is tender. Add eggplant and cook until eggplant is heated through. Season with salt and pepper to taste.

Serving Size: makes 6 1/2 cup servings
