Ingredients

    6 unpeeled cloves garlic
    6 zucchini (or yellow squash, or a combination), sliced lengthwise
    1 sweet onion, thickly sliced
    1 cup Parmesan cheese
    1 cup toasted walnuts
    salt and pepper
    2 Tbs. fresh thyme leaves

Directions

1. wrap garlic with 1 Tbs. Olive oil in foil, and grill about 20 min.
2. Brush squash, onion slices with remaining oil, season with salt and pepper.
3. Grill until charred, 10 minutes.
4. Squeeze garlic from skins.
5. Using food processor, puree veggies with parmesan, walnuts, thyme and garlic.
