    2.5 lbs pork shoulder, cubed and trimmed
    1 tbs olive oil
    2 c white wine
    2 dried chilies
    5 tart apples
    1 head garlic
    1 tbs rosemary
    Salt and pepper


In Dutch oven add oil
Brown pork on all sides
Remove, add peppers and garlic
Return pork to pan
Add wine and rosemary
Bring to boil reduce heat cook 4 hours till tender
Serve over polenta( not in calorie count)
