    2 C. shredded COOKED chicken breast

    1/2 C finely chopped cucumber

    1/4 C low-fat mayo

    1 tsp minced peeled fresh ginger (or can use 1/2 tsp ground ginger )

    1 tsp Sesame Oil

    1/4 tsp salt

    1/8 tsp (freshly) ground pepper

    4 (8-inch) whole-wheat flour or tomato tortillas


Combine the COOKED chicken, cukes, mayo, cilantro ginger, oil, salt, and pepper in a medium bowl...toss until well mixed.

Toast the tortillas in a lrg skillet over med. heat approx 1 min each side

Divide the chicken filling evenly onto the tortillas and roll them up.

POINTS (for those on WW is 5)

This yields 4 servings and if you want, you can add cheese just don't forget to add the nutritional values for it.
