    chicken
    bread crums
    egg
    canola oil

Directions

cut chicken breasts in 1/2. Pound out to 1/3 inch think. coat in bread crumbs, then egg, then bread crumbs. Shallow fry in oil 4 minuts on each side. Then put on cooling rack over a oven pan. Bake at 350 for about 15-20 minutes longer. Oil will drip into oven pan, chicken gets cripsy and isn't overcooked
