    1 Cup sliced Crimini Mushrooms
    1 Cup Arugula
    1 Clove Garlic, chopped
    1 Tbls EVOO
    1 Tbls Shredded Parmesan Cheese


I fix this in the morning, throw it into a Tupperware container and when I open it for lunch it is perfectly blended, the arugula stands up really well to the heat from the mushrooms, and the flavors play well together.


Heat Olive oil in skillet, add chopped garlic and cook, stirring, until the garlic is softened, add mushrooms and saute them, stirring as needed, for about 5 minutes or until desired softness. Remove from heat, toss with one cup of arugula, sprinkle with Shredded parm, and enjoy.

Serving Size: Makes 1 entree serving, or 2 side dish servings
