    2.5 cups diced eggplant
    1 cup diced ed pepper
    .75 diced tomatoes
    1 tbsp olive oil
    2 cups spinach
    3 cups penne pasta whole wheat
    .5 cup ricotta part skim
    .3 mozarella
    1 cup sauce


Cook veggies before hand until soft.
Combine rest of ingredients in 9x13 pan and bake at 375 for 30 minutes.
