    1/2 cup sliced zucchini
    1 cup sliced mushrooms
    1/4 cup sliced onion
    2 cups cooked brown rice
    1/4 cup non fat Greek Yogurt
    1 tablespoon fat free butter (promise)
    1 teaspoon minced garlic
    1 tablespoon chives


Melt butter in a skillet on medium heat. Add vegetables, chives, and garlic, and stir-fry until tender. Add cooked brown rice and saute for a few minutes, stirring constantly. If mixture looks dry, add a small amount of water. Stir in Greek yogurt and serve.
