Quick Stir Fry

1 cup cooked rice
1 individual serving size baby carrots, sliced
1 cup raw spinach, chopped
1/4 large onion, diced
1 Tbps minced garlic
2 eggs, beaten
salt & pepper to taste (I only used pepper)
Splash of beef broth (not calculated in recipe)
If I do this again: I will put the eggs in before the splash of broth... because I think the eggs would have added just enough moisture to the rice. But it works this way too. I added a splash of soy sauce to the recipe instead of salt for flavor.
Serving Size: Makes 1-2 servings
