    8 oz frozen talipia
    1 med red pepper
    1 med sweat potato
    2 TBSP extra virgin olive oil


Add olive oil to skillet. Dice potatoes, slice red peppers, add to skillet. Saute for a couple minutes on medium high heat. Then add fish to skillet. Cover & cook on low for 8 minutes or until fish is flakey.
