    1/2 c. sun dried tomatoew (not oil packed)
    1 cup boiling water
    3 bags baby spinnach
    2 tsp. olive oil
    2 cloves garlic -minced
    1/8 tsp. crushed red pepper
    1/2 tsp. salt
    1/8 tsp. sugar
    1/4 cup chicken broth (fat free, low sodium


Combine sun dried tomatoes and boiling water in a small bowl and let stand until tomatoes have softened, about 15 minutes. Drain tomatoes, reserving 1/4 cup of soaking liquid. Coarsley cop tomatoes and set aside.

Rinse the spinach in luke warm water. Repeat, and drain.

Heat oil in large nonstick skillet over medium heat. Add garlic, redd pepper, spinach, salt, sugar, and broth, cook till garlic is fragrant, about 3 minutes.

Add sun dried tomatoes and reserved soaking liquid. cover and cook till spinach is wilted, about 4 min. Spoon onto 4 plates and serve.
