Ingredients

    *can of no sugar added pear slices, drained
    1 c splenda brown sugar mix for baking
    1 cup apple sauce, unsweetened
    2 eggs
    3 c self rising flour
    2 tsp pumpkin pie spice
    1 c chopped walnuts
    1 cup coconut (optional)
    1 tsp almond extract

    * substitute 2 cups pealed, sliced fresh pears for canned

Directions

Mix dry ingredients with mixer, stirring in nuts and coconut by hand last. Grease and flour a 13X9 pan and bake cake at 350 for one hour and 10 minutes. Cut into 16 slices.
