Great low calorie side dish for main meal or as a meal by itself. Great low calorie side dish for main meal or as a meal by itself.

    Zuccini 8 medium
    Tomato Sause 3 small 8 oz cans
    Onion medium in size
    3 Tbsp Extra Vrigin Olive Oil
    1 Tbsp Oregano


Great with Italian bread!!!


In a LARGE Pot Add Extra Virgin Olive Oil, and sliced Onion. Cook over a low heat until lightly brown. Add Tomato Sause and Oregano. Cut zuccini into 1 inch slices and then quater each slice, and add this to your mixture. Let this cook for apx 1 -1 1/2 hours until you can pierce the zuccini with a fork.

Serving Size: makes 10 - 1 cup servings
