Number of Servings: 4


    1 egg
    1/2 tablespoon lemon juice
    1 pound boneless skinless chicken cutlets
    1/2 cup seasoned breadcrumbs
    1 tablespoon extra virgin olive oil
    salt and pepper to taste


Pound the breasts to equal thickness between 1/4 to 1/2 inch.
Flip chicken over half way through the cooking.


Preheat oven to 400. Grease a cookie sheet with tablespoon of olive oil.
In a bowl lightly beat egg with lemon juice.
Place breadcrumbs on plate or wax paper.
Cut chicken into serving pieces. Dip chicken into egg mixture and then coat with breadcrumbs.
Place on greased cookie sheet.
Bake for 15 to 20 minutes or until juices run clear.
