    1 Tbs. Olive Oil
    1 Leek, chopped into half moon shapes and washed
    2 Large or 4 small potatoes, peeled and cubed
    1 Ounce white wine (or vegetable broth if you don't have wine)


Heat olive oil over medium heat in a large saute pan.

Add the potatoes and cook for a few minutes until just starting to get tender.

Add the leeks to the pan, and cook until the potatoes are done and the leeks are tender.

Add the white wine to deglaze the pan, continue to cook for about 2 minutes.

Serve warm.

Makes approximately 4 servings.
