This is a healthier version of the "smashed potatoes" that I've enjoyed so much. This is a healthier version of the "smashed potatoes" that I've enjoyed so much.
Number of Servings: 8


    8 small red potatoes (if you don't want to use the small potatoes then you can cut a medium potato in half)
    Pam spray
    2 tbspn olive oil
    Garlic salt (or your favorite herb blend if you are going without salt)
    Fresh herbs (whatever is in season - I've used Thyme and/or chives, but I think this would work with many different herbs).


Boil potatoes in water until fork tender. Take pan and spray with Pam (to keep potatoes from sticking). Remove potatoes from pot and place in greased pan. Smash with potato masher (or bottom of glass if you don't have a potato masher). I mash them to about 1/2 inch thick. (The thinner you mash the potatoes, the crispier they'll be). Brush with olive oil and sprinkle with garlic salt and herbs. Turn broiler on high. Place on top rack under broiler and broil for about 5-10 minutes or until crispy. Serve immediately.
