    1 lb. ground turkey
    1/2 onion, chopped
    1 green bell pepper, chopped
    2 cloves garlic, diced
    3/4 tsp. salt
    2 cups water, divided
    1 can tomato sauce
    1/2 tsp. chili powder
    1/2 tsp. vinegar
    1/2 cup yellow cornmeal
    1 pckg. saltine crackers (about 36)
    2 cups reduced fat cheddar cheese


Can also substitute with ground beef but calories not included.


Preheat oven to 350F and grease 8x8 casserole dish.

In large skillet, cook garlic, onion, bell peper, and ground turkey. Add salt, 1 1/2 cups water, tomato sauce, chili powder, and vinegar, and bring to a boil.

Add corn meal and 1/2 cup cold water. Simmer for 5 minutes. Mixture will be bubbly and spit.

In greased 8x8 casserole dish, layer crackers, meat mixture and cheese. Repeat layer. Top with layer of crackers and cheese. Bake at 350F for 20-40 minutes.
