Ingredients
-
**Flax Seed Meal (ground flax), 1.5 cups
*Krusteaz Fat Free Buttermilk Pancake Mix,(1/2 c dry)
Buttermilk, lowfat, 1 cup
egg white, fresh, 2 large
Blueberries, fresh, 1/3 cup
Kellogg's Low Fat Granola without Raisins Cereal, 0.5 cup
Directions
In a large bowl, mix the pancake mix and flax meal together.
In a separate smaller bowl, beat the eggs with the milk and vanilla.
Add the wet ingredients to the dry ingredients and stir together until just combined and moistened. Fold in the blueberries.
Place a large skillet over medium-high heat and coat lightly with cooking spray.
Dollop the batter in 1/4 or 1/3 cup amounts per pancake. Cook until bubbles appear on the top and the edges of the pancakes starts to look dry. Flip and cook the other side until golden brown.
Serve immediately with butter spread and syrup.
This is a very easy way to take regular pancake mix and turn it into healthier and tastier pancakes. I hope you like it. Serve with warm maple syrup for best results.
Serving Size: makes 8-10 small pancakes
