    2 1/4 cups Sugar
    2/3 cup oil
    3 large eggs
    1 regular can of pureed pumpkin (not pumpkin pie filling)
    1/4 cup water
    3 cups flour
    1 1/2 tsp baking soda
    1 1/2 tsp salt
    3/4 tsp baking powder
    3/4 tsp ground nutmeg
    3/4 tsp ground cloves
    3/4 tsp ground cinnamon
    3/4 tsp ground alspice

    1/2 cup shortening
    1 1/4 cup confectioners sugar
    1/4 tsp salt
    1/2 tsp vanilla
    2/3 cup marshmallow fluff
    2 Tbsp Milk
    2 Tbsp Ground Cinnamon


Use really good quality cinnamon - especially in the filling where you can really taste the difference


Pre-heat oven to 350*
Mix together Sugar, Oil, eggs, water & Pumpkin puree and set aside
Sift together Flour, Baking Soda, Baking Powder, Salt & Spices and add to wet ingredients.
Mix until just combined
Use 1/4 cup scoop to scoop onto lined baking sheet (with silpat or parchment)
Bake 15-20 minutes, until toothpick or sharp knife inserted into center comes out clean

Have all ingredients at room temperature
Whip together all ingredients: Shortening, Confectioner's Sugar, Salt, Vanilla Extract, Marshmallow Fluff, Milk & Cinnamon
Sandwich generously in between two cakes
