Nice creamy vegan sauce with mushroom and spinach. Perfect for a quick supper! Nice creamy vegan sauce with mushroom and spinach. Perfect for a quick supper!
Number of Servings: 4


    2 tablespoons vegan/non dairy margarine
    1 tablespoon extra virgin olive oil
    1 small diced onion
    2 large minced garlic cloves
    16 oz sliced mushrooms (any type or types you like)
    1 cup fresh spinach
    1 tbsp all purpose flour
    1 cup soy/non dairy milk (I use vanilla flavored soy)
    1/4 cup dairy free sour cream
    1/4 tsp salt, plus more to taste
    Fresh ground pepper to taste


Add the spices you like! Perfect for pasta, rice, polenta, squash, or whatever you like!


1. Sauté mushrooms, onion and olive oil in large pan over medium heat. Add spinach and garlic after mushrooms soften and onions begin to become translucent. Transfer contents to a bowl and set aside.

2. In same sauté pan, whisk constantly soy margarine and flour over medium heat for approximately 1 minute. Gradually add in soy milk to vegan margarine and flour, while continuing to stir constantly until consistency of mixture is smooth. Add non dairy sour cream, salt and pepper to taste, stirring until well combined.

4. Stir mushroom and spinach mixture back into sauté pan cream sauce. Cook until mixture is heated throughout, approximately 3 to 5 minutes, over medium heat.

5. Season sauce to taste. Remove pan from heat. Add pasta to the sauce and toss to thoroughly coat, or pour sauce over rice, polenta, squash, etc.
