Almost any type of potato will work for this recipe. Almost any type of potato will work for this recipe.
Number of Servings: 5


    2 lb red potatoes, cubed
    2 T olive oil
    1 t garlic powder
    1 t onion powder
    1 t salt
    .25 t paprika


If you have the time to mince and use fresh garlic instead of garlic powder, it will taste even better! The salt can be left out for those watching their sodium.


Rinse and clean potatoes, keeping their skins on. Chop the potatoes into medium sized cubes. Put potatoes in a large bowl and top with oil and seasonings, mix with hands until the potatoes are thoroughly covered. Place in a single layer in a 9 x 13 pan and bake at 400 F for 15 minutes. Briefly remove from the oven, stir in pan, and bake another 15 min. Stir again, and bake a final 5-15 minutes until soft enough to easily pierce with a fork.
