Number of Servings: 12


    2 eggs
    2 very ripe bananas
    1/2 cup brown sugar
    1/2 cup canola oil
    2 cups flour
    1 cup walnuts
    1.5 tsp baking powder
    PAM spray for muffin pan


Preheat oven before you start making the muffin batter.


Mix wet ingredients with a stand or hand mixer until combined. In separate bowl, mix dry ingredients by hand until combined. Add dry ingredients to wet ingredients i mixer until combined - don't overmix. Spray muffin pan with PAM, distribute batter evenly, and bake in 375 degree oven for 20 minutes - check to see if the muffins need an extra 5 minutes, depending on your oven.
