Number of Servings: 2


    10 oz spinach (or I package fresh spinach)
    1 cup chopped mushrooms, whatever type you prefer
    1 small onion, diced
    2 cloves minced garlic
    1 tablespoon extra virgin olive oil
    1 lemon, squeezed with seeds removed, or 2 tablespoons lemon juice


Feel free to add spices to your taste! It goes well with a variety of dishes!


1. In large pan, sauté onions, mushrooms, garlic (If you are using garlic from a jar, do not add it in now!) in olive oil over medium heat until onions are translucent and mushrooms are soft.
2. Stir in spinach to mushrooms and onions mixture, handful by handful (add garlic from a jar now if you are using that). Be sure all spinach is thoroughly wilted and sautéed.
3. Add lemon juice, stir it thoroughly throughout for approximately 30 to 45 seconds.
4. Remove from heat, add spices to your taste, and serve.
