    1 acorn squash, cut in half, deseeded, sliced into half moons and roasted for 35 minutes
    1 tube Trader Joe's polenta
    1 cup frozen spinach, defrosted and water squeezed out
    2 cups diced tomatoes, seasoned with Italian seasoning
    1 cup tofu, crumbled and seasoned (tofu ricotta)


mix the spinach in with the tofu ricotta mixture


stacks go in order of...polenta round, squash, tomato sauce, ricotta mix, sauce and then back to beginning. When assembled bake for 40 minutes in 350 degree oven, uncover for last 10 minutes to add crispness.
