A yummy little crunchy snack and a way to get two servings of fruit/veggies. A yummy little crunchy snack and a way to get two servings of fruit/veggies.
Number of Servings: 4


    - 2 apples, diced (1/4 inch) *Fuji or Gala make the salad colorful, but any type will work*
    - Juice of 1 lemon (or a few squirts of the store-bought stuff)
    - 2 ribs celery, diced (1/4 inch)
    - 1/2 cup coarsely chopped walnuts
    - 1/3 cup golden raisins
    - 1/4 cup reduced-calorie mayonnaise
    - 1/4 cup low-fat plain Greek yogurt
    - salt and pepper to taste


Toss the apples with the lemon juice in a bowl (to prevent browning). Add celery, walnuts, and raisins, then toss. Combine the mayo and yogurt in another bowl, then fold into the apple mixture. Season to taste with salt and pepper. Pack in tightly covered, small plastic containers.

Serving Size: Makes about four 1-cup servings
