    2 large eggs
    1/3 cup packed organic light brown sugar
    3 cups mashed bananas(6medium)
    1 cup organic buttermilk
    1 cup wheat bran
    1/4 cup coconut oil
    1 tsp vanilla extract
    1 cup whole wheat flour
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 tsp cinnamon
    1/4 tsp salt
    1/3 cup walnuts(optional)


Whisk eggs, brown sugar until smooth, whish in mashed bananas, buttermilk, wheat bran, oil and vanilla.
Whish flours, baking powder, baking soda, cinnamon and salt in large bowl. Add wet ingredients and stir with rubber spatula until just combined.
Spray 12 muffin tins. Scoop batter in ( they will be quite full) Sprinkle with walnuts if using
400 degrees 15-25 min
