    *Turkey, Ground turkey, 93% lean, 20 oz
    vermicelles, 6 serving
    Romaine Lettuce (salad), 6 cup, shredded
    *Bean sprouts, 2 cup
    Carrots, raw, 2 cup, julienne
    Peanuts, (with salt), 1 oz
    Cilantro, raw, 10 tbsp
    Spearmint, 2 tbsp
    Scallions, raw, 2 medium, diced
    Ginger Root, 3 tsp
    Garlic, 2 clove
    *Fish Sauce, 8 tbsp
    *Soy Sauce, 3 tbsp
    Jalapeno Peppers, .5 pepper
    Lemon grass (citronella), fresh, 1 tbsp
    Brown Sugar, 5 TB packed
    Water, tap, .5 cup (8 fl oz)


really get those noodles dried out almost sticky before adding to salad. Put on dressing a little at a time to taste.
Buy prepped produce in strips or shredded to speed up


Mix Turkey or chicken with minced garlic, 1 scallion onion and ginger with 3 TB soysauce and 2 TB brown sugar, with a pinch of salt and ground pepper. set aside.

Pour boiling water over noodles, then let sit for about 10 minutes, drain and let dry out a bit.

Dressing is Fish sauce, lemongrass, jalepenos, 3 TB brown sugar and water. (Drain when ready to serve over noodles)

Make salad fixings with the rest of ingredients separate but side by side in a big bowl.

Make 1/2 TB sized meatballs with hand and put on Pam sprayed cookie sheet. Cook for about 15 minutes on 375.

Combine everything together and serve
