    3 green onions, sliced
    1 medium green or red pepper, diced
    1 medium clove garlic, minced
    2 ounces lo-fat cheddar or Montery Jack cheese, grated
    1 - 15.5 oz can No Salt Black Beans, rinsed & drained
    1 tsp canola oil
    4 large eggs
    3/4 tsp ground cumin*
    1/4 tsp black pepper
    5 Whole Wheat tortillas (Ortega 10")


*If doubling recipe, do not double cumin.


1. Rinse onions and pepper. Peel garlic.
2. Slice onions. Remove pepper core and dice. Mince onion.
3. Drain and rinse beans.
4. Heat medium skillet over medium heat. Add oil. Add onions peppers. Cook until soft. Add garlic and cook 1 minute. Add beans, 1/2 tsp. cumin and pepper. Cook for 3 minutes. Transfer mixture to bowl.
5. Crack eggs into bowl. Add remaining cumin. Beat until fluffy.
6. Spray pan with non-stick spray. Lower heat to medium-low heat. Add egg mixture and cook until set.
7. Assemble burrito and roll.
*If doubling recipe, do not double cumin.

Serving Size: Makes 4 Burritos
