    2.5 lbs of potatoes ( Red work best) diced with skin on
    2.5 lbs of chicken breast or thighs ( boneless, skinless, in bite size chunks)

    1 can of sliced carrots
    1 can string beans
    1 the chopped fresh chives
    Feel free to experiment with other vegetables
    Seasonings to taste ( salt, pepper, rosemary, garlic )


Can be left cooking for longer to fit a busy schedule, but if you want to REDUCE cooking time you will need to pre- oil both the potatoes and the chicken.


Mix vegetables and chives in bottom of crock pot. ( do not drain carrots ). Layer potatoes on top, and then cut up chicken pieces on top of that. Sprinkle seasonings on top of chicken, cover and cook on med. For 2 to 4 hours. Mix ingredients in pot to distribute evenly, and add more seasoning if desired. Cook an additional 2 to 4 hours and serve piping hot with biscuits or rolls.

Serving Size: Serves 7 ( approx 1 cup sevings )
