    5 eggs
    1 can of Hormel smoked ham
    1/3 to 1/2 Cup Shredded Cheddar Cheese
    1 tbs Mayo


I use Helman's Canola Mayo to cut the fat. Also, you can use half a can of the ham and still have good smokey flavor. We occasionally add a touch of onion powder or pepper for extra zip.


Add eggs and mayo to medium size mixing bowl. Stir. Add shredded chedder and crumble in ham. Stir ingredients briskly and fry in lightly oiled pan over medium heat.

Serving Size: Feeds four or five easily. VERY filling.
