Ingredients

    3 tbsp Butter, salted
    4 tortilla, medium (approx 6" dia) Corn Tortillas
    1 medium (2-1/4" to 3-1/4" dia.) Potato, raw
    0.5 serving Fresh Sweet Onion (1 Medium Raw)
    2 clove Garlic
    2 pepper Serrano Peppers
    6 large Egg, fresh, whole, raw
    0.25 cup, whipped Heavy Whipping Cream
    1 tsp Salt
    2 tsp Pepper, black
    0.5 cup, shredded Cheddar Cheese
    0.5 cup cilantro (fresh)

Directions

1. Melt butter in a pan. Bake or fry tortilla strips.

2. In bowl, whisk eggs together with milk. Add a dash of salt and pepper.

3. If using potatoes, cook until done then remove them and add onions, peppers, garlic and mushrooms to the pan, and cook for a couple of minutes. Add the cooked potatoes back in.

4. Add egg mixture and tortilla strips to the skillet and let eggs sit for about one minute or until set on the bottom and then gently stir.

5. Sprinkle cheese and cilantro on top of eggs and continue to cook until melted.
