    Chicken breast (1)
    Chicken Broth (2)
    Carrots (1 medium)
    Celery (2 small stalks)
    Onion (.5 cup)
    Oilve Oil (2 teaspoons)
    Parsley (fresh)


May add cooked rice, noodles for a more robust soup (will add more calories and carbs).


Dice and cook seasoned chicken (salt and pepper as needed) in non-stick skillet over medium heat until cooked through. Meanwhile dice onion, carrot and celery. Heat 2 teaspoons of olive oil in medium pot, add diced vegetables and cook until slightly soft. Add chicken. Add 2 cans chicken broth and chopped, fresh parsley. Let come to a boil and then simmer for approximately 20 minutes. Adjust seasonings as needed.

Serving Size: Makes 8 1/2 cup servings
