Number of Servings: 4

Ingredients

    1# Tilapia fillets 4 oz each
    !/2 tsp salt
    1/4 tsp pepper
    1 Tbl olive oil
    1 Tbl butter
    1/4 Cup whole wheat flour
    1/4 Cup dry white wine
    Juice of 1 Lemon
    1 Tbl grated lemon zest
    1 Tbl drained Capers

Directions

Put flour in a shallow dish and season with salt and pepper. Heat saute pan and add olive oil and 1 tsp of he butter on med heat. Dredge fish in flour and saute in the pan until brown, and fish is done. Transfere fish to a plate and keep warm. Add the remaining butter to the pan and any remaining flour, Stir until blended. Add the wine, lemon juice and lemon zest, cook until thickened, if it is to thick add a touch of water, stir in capers heat and pour over the fish.. Serves 4
