    1 T melted butter
    1/2 med onion chopped
    3 T butter
    1/4 cup flour
    2 cups fat free half & half
    4 cups chicken broth or stock
    1 lb fresh or frozen broccoli
    1 cup grated carrots
    salt and pepper to taste
    1/4 t nutmeg
    1.5 cups 2% shredded cheddar cheese


Melt butter in pot over med heat, saute onion untill soft. Add flour to make roux. Whisk while adding half and half and chicken broth. Cook until smooth.
Stir in broccoli, carrots, salt, pepper, and nutmeg. Simmer over low for about 30 minutes or until veggies are soft.
You can then remove from heat and use immersion blender to make soup smooth or just leave it as is and add cheese.
We like this served over cauliflower in a bowl to add a little more veggies to the soup.
