    4 c uncooked brown rice
    2 1/2 cups skim milk
    2 c water
    2 envelopes Hidden Valley Ranch Dressing mix
    2 lb boneless skinless chicken breasts, cut into large chunks
    1/2 cups light margarine


Place rice in 9x13 pan sprayed with cooking spray. In a bowl, combine milk, water, dressing mix, pour over rice.
Top with chicken. Melt butter and pour over top.
Cover and bake for 60 minutes or until rice is tender and chicken is done.
Serves 9
