Ingredients

    6 dates
    1/4 tsp red pepper flakes (or less)
    1/2 cup peanut butter
    2 cloves garlic
    2 tbsp ginger root
    1/2 cup soy sauce
    2 limes
    1 packge Nanka Seimen Noodles (Yokogiri Vdon)
    1 package frozen stirfry vegetables

Directions

Place ginger and garlic in food processor and mince. Add dates, red pepper and peanut butter and process 10 seconds. Add soy sauce, lime zest from 1 lime. Turn processor on and slowly add juice from both limes (about 6 tbsp). Process until smooth.

Cook noodles and vegetables according to package directions. Combine both with sauce and cook unil heated through.
