Introduction

I was looking in the recipes and didn't see this. This is a recipe that has been something my family and I have cooked for ages and is very cost efficient. I've reduced some ingredients to lower the calories and such. It makes large portions and can be added to the pasta of your choice. I'm from the South so I like a kick and add some Cajun Seasoning. Ingredients

    2 tbspns extra virgin olive oil
    2 1/2 pounds lean ground beef
    6 cups regular mushrooms, sliced
    1 up chopped onion raw
    1 tbsp black pepper
    2 tsps salt
    3 tbsps parsley dried or fresh
    2tbsns chopped shallots
    2 26 oz Campbells 98% fat free Cream of Mushroom Soup
    1 cup light sour cream

Tips

You can try a number of spices to this dish depending on what you like. I'm a big fan of garlic salt myself. I sometimes add italian seasoning, basil, and oregeno to add depth of flavor or switch regular mushrooms for portebello mushrooms. Another thing you can do is add a bit of parmesan on top for added flavor.


Directions

Using a large Dutch Oven, heat 2 tbsp of extra virgin olive oil. While that heats on medium heat chop a cup of white onions. Once oil is heated, add onions and saute until soft. Add shallots. Stir.

Add the ground beef and stir until onions and shallots are mixed throughout and brown meat. While meat is browning add salt pepper parsley. Once meat is browned add mushrooms and cook for about 4 to 5 minutes.

Once mushrooms soften a bit add cream of mushroom soup. Stir throughout until everything is mixed thoroughly. Cover and cook for 30 minutes stirring often to be sure nothing sticks to bottom.

After about 30 minutes take lid off and stir in sour cream being sure it is well blended. Cook for another 15 to 20 minutes uncovered and on low heat allowing it to simmer. Be sure to continue stirring often to be sure nothing sticks on the bottom.

Serve over any pasta and enjoy!
