Introduction

Tasty and healthy curry with peas. Great as a side, or even a meal. Add some healthy baked chicken or white fish and you've got an awesome Mediterranean meal. My kids eat this one up. Number of Servings: 6

Ingredients

    3 cups cooked medium grain Brown Rice
    6 generous sprays I Can't Believe Its Not Butter, Garlic and Herb flavor spray
    2 tbsp Curry Powder (if serving for kids, use half)
    3 tsp minced Garlic
    2 tsp ground Ginger
    1/2 pkg Frozen Peas

Directions

In a 10 inch skillet over medium heat, add butter spray and rice. Stir fry for 3 minutes, then add curry, ginger, and garlic. Stir fry for 3 more minutes, add peas and stir fry till warmed through, aprox 4-6 min. Add cheese, and stir well to combine, till cheese melts through.

Remove from heat and serve.

Makes six side dish servings, 3-4 if main dish
