Delicious, colorful, great for lunch. Delicious, colorful, great for lunch.
Number of Servings: 1


    Asparagus, fresh, 12 spear, medium
    Red Ripe Tomatoes, 1 large whole (3" dia)
    Bread, whole wheat (including toast), 2 slice
    Mayonnaise, regular (mayo), 1 tbsp
    *Frigo Light String Cheese, 1 oz
    Blue Cheese, 1 oz
    *Lemon Juice, .1 cup


If you dislike blue cheese, use less or substitute a preferred cheese.


Toast 2 pieces of bread.
Spread mayonnaise on both.
Slice tomatoes and layer on toast.
Lay cooked asparagus spears on top.
Sprinkle blue cheese and mozzarella on top.
Place under hot broiler until bubbling.
Squeeze lemon juice on top before serving.
Sprinkle with salt and pepper if desired.

Serving Size: Makes 1 serving.
