    Fresh ginger
    Coconut oil
    Cashew nuts
    Boy choy


Add coconut oil, freshly shaved ginger and a little bit of water (just to prevent the ginger from browning and to create a "broth"). Let that simmer in a sauce pan. Add celery and cashews. Mix and let simmer. Once celery has softened, add bok choy and shrimp (tail on has more flavor, if shrimp is frozen add it when celery is added)

I don't use rice, but if you do, it is a good way to soak up the yummy broth. You could substitute cabbage for bok choy, just add it a little sooner as it takes a bit longer.

Salt to taste
