    8 banana peppers, cored and sliced into 1/4" rings
    1 T butter
    1 small yellow onion, chopped
    1 (28 oz) can tomato sauce
    4 cloves garlic, sliced
    1 t oregano
    1 # sweet Italian turkey sausage, casings removed (I made this recipe for 1.25 #, since I use a whole Shadybrook Farm sausage package)


1. Heat butter. Saute peppers, onion, and garlic until tender, 3-5 minutes. Stir in tomato sauce, oregano, and pinch of salt. Let simmer uncovered for 10 min. Preheat oven to 350 degrees F.

2. Meanwhile, in a 9 x 13 glass backing dish, pinch off pieces of turkey sausage and spread out evenly. Pour sauce over meat. Bake one hour, uncovered.

Serving Size: I make 4-6 meals out of this.
