    1 T olive oil
    1/2 cup onion, diced
    1/2 cup red bell pepper, diced
    6 oz turkey sausage, cut up
    1 can diced tomatoes
    1 can pumpkin puree
    2 cans black beans, drained
    1 tub Knorr homestyle stock
    3 cups water
    1 T curry powder
    1 tsp cumin
    1/4 tsp cayenne
    1 8-oz can fat free evaporated milk


Heat olive oil. Cook onions until lightly browned. Add sausage and red pepper and brown. Add canned tomatoes (or Ro-tel), pumpkin puree, black beans, Knorr homestyle stock, and water. Bring to a simmer. Add curry, cumin, and cayenne. Can skip cayenne if you like it milder. Stir in evaporated milk, simmer for 5 min gently. NO ROLLING BOIL or you'll break the broth. You can puree 1 can of black beans for a smoother soup.
