Ingredients

1 packet ( 1lbs) 16 Bean Soup Mix
12 cups water
1/4 cup Tomato Puree ( no salt added)
1 onion chopped
3 gloves garlic chopped
1 tbsp Beef flavored soup base
1tbsp salt
1tsp pepper
juice from 1 lemon
1 cup parsley chopped
1 cup olive oil
1 large carrot chopped
Directions
Let beans soak over night in water. Next day drain and put them in a pot with the water and bring them to a boil. Lower the heat and add the tomato, pepper, soup base and olive oil. Chop the onion, garlic and carrot and add it to the pot. Let cook for 2 1/2 hours. Then add the parsley. Cook for 30 minutes more. Turn off the stove and add the salt and lemon juice.
